Ford Coppola Director’s Cut Wine Dinner on Wednesday November 1st at 6pm

When the Coppola family decided to construct a winery resort in Sonoma County, they felt strongly about giving head winemaker Corey Beck, a Sonoma County native, the opportunity to make wines that reflected his own vision of the quintessential Sonoma wine. Director’s Cut became that endeavor— limited production, appellation-designate wines sourced from Sonoma’s diverse and distinctive microclimates. Named after the version of a film which most reflects the director’s vision, the Director’s Cut wines represent their head winemaker’s vision and pays homage to the history of filmmaking with its wraparound label designed after a Zoetrope strip, one of the earliest moving picture devices.

1st Course

Stuffed Zucchini
– Fresh Zucchini stuffed with mix vegetables and Italian sausage, topped with a baked parmigiano reggiano cheese.
Paired with a 2013 White Doe chenin blanc blend.

2nd Course

Insalata Toscana
– Spring mix Lettuce, tomatoes, cucumber, onions, and Provolone cheese served with crostini.
Paired with a 2016 Bees’ Box Pinot noir.

3rd Course

Seafood Ravioli Alla Arrabiata.
– Fresh seafood ravioli pasta stuffed with crab meat, scallops, and shrimp finished in an arrabiata sauce.
Paired with a 2014 Director’s Cut Cabernet Sauvignon.

4th Course

Aged New York Steak Alla Pizzaiola
Aged Grilled New York Steak topped with a roasted garlic and mushrooms demi-glace.
Paired with a 2013 Director’s Cut Cinema Red Blend.

Pumpkin Cheesecake
